Juan Olivera
Chef Juan Olivera, originally from Montevideo, Uruguay, developed a love for cooking from a young age. He enjoyed preparing meals with his elders at family gatherings, where food brought everyone together and sparked his passion for the culinary world.
In 2003, he moved to Washington, DC, where he has worked with a wide range of cuisines, including Spanish, Italian, American, Latin, and Middle Eastern.
In 2010, he opened Fast Gourmet as chef and co-owner. The sandwich shop was recognized by Washington City Paper and featured in The Washington Post Dining Guide.
Juan is the chef and co-owner of Ceibo, a contemporary restaurant in Adams Morgan, which has been featured in The Washington Post’s "40 Best Restaurants in the City" and Eater DC’s "38 Essential Restaurants."

Manuel Olivera
Originally from Uruguay, Manuel has been working in the Washington, DC restaurant scene for over a decade. Some notable stints before Ceibo were: General Manager of El Secreto De Rosita Rosita, added to the Michelin Guide in its first year and featured on DC Eater’s essential restaurants. Service Manager for Del Mar of the Michelin-winning Fabio Trabocchi Restaurant Group and Barcelona Wine Bar as Wine Steward and Restaurant Manager.
